Israeli startup Mush Foods has launched in the US a restaurant-ready line of chef-crafted dishes made from mushroom root blends.
The 50Cut line is designed to be an accompaniment to main course meat dishes.
The company uses proteins from mycelium, the root system of a fungus, to create its line.
50Cut is designed to improve nutrition and sustainability when paired with certain beef, poultry and fish dishes.
The product is meant to reduce the amount of animal products in the dish while not completely erasing it. At the same time, it is meant to reduce costs and lessen environmental impact for the restaurants.
The same product was released last year in the Israeli market.
Last year, Mush Foods closed a $6.2 million seed round of funding, with support from many prominent venture capitalists, including Milk & Honey Ventures, Viola Ventures and others.
“We’re grateful for the enthusiastic and early recognition we’ve received and are thrilled to launch a line of outstanding mushroom root blends we think chefs will love,” said Mush Foods Culinary Director AJ Schaller.
“We’ve crafted a product that can help reduce meat consumption while enhancing flavor, juiciness, and yields.”
